Red Velvet Cupcake: Recipe

Red Velvet Cupcakes

Ingredients Needed:

2 1/2 cups cake flour
1 1/2 cups sugar
1 teaspoon baking soda
1 teaspoon salt
1/4 cup cocoa powder
1 1/2 cups vegetable oil
1 cup buttermilk
2 large eggs
3 tablespoons liquid red food coloring (Add more for desired darkness)
1 1/2 teaspoon vanilla extract

Preheat the oven to 350 degrees F. Line muffin tins with cupcake papers.

In a large bowl, sift together the flour, sugar, baking soda, salt, and cocoa powder. In a separate bowl, mix milk and vinegar and let sit for 10 minutes curdling will occur. Then add the oil, eggs, food coloring and vanilla to the milk mixture, whisking until mixed.

Using a stand mixer, add the dry ingredients into the wet ingredients with the paddle until just combined.

Divide the cake batter evenly into the tins. Bake for about 10-12 minutes.

  1. Thanks Ruth I will be sure to try it out.
I had to laugh I was talking with a lady that does cake deco for a living and she did ask if I knew how to bake a cake from scratch and not from a packet - I had to laugh (I can by the way)!!

  2. Yeah, I know you can! Surely most people bake from scratch... don't they? I don't ever remember using a packet mix except for chocolate mousse.

  3. lol apparently not - not according to this lady anyway!! ahh It made me laugh

  4. I'm going to try that recipe too!! I have wanted to try baking a red velvet cake for a long time now so I'm excited that you've posted that recipe. Thanks so much, Ruth.
